dc.description.abstract Quinoa, a pseudo-cereal originating from Latin America (Peru and Bolivia) and belonging to the chenopodium family, is renowned for its high nutritional value. Its official introduction in Algeria dates back to 2014. The main objective of this dissertation was to contribute to the extraction of bioactive compounds from locally cultivated quinoa seeds. To achieve this, various experiments were conducted, including seed pre-treatment, extraction of proteins and polyphenols, as well as evaluation of their antibacterial, antifungal, antioxidant, anti-inflammatory activities, and the quantity of present fats. The obtained results allowed for the valorization of quinoa in the form of different by-products, opening interesting prospects in the pharmaceutical industry. This study highlights the economic and nutritional potential of quinoa, with its high protein content, absence of gluten, and beneficial properties for health. Its valorization can contribute to improving the health of populations and ensuring sustainable food security for future generations. fr_FR
